‘Thank you for shovelling’ cake

I’m going to keep it short and sweet this time, because if you live basically anywhere in Canada, you will know what I am talking about. (If you live in California, you will have no idea whatsoever what I’m talking about. Go make yourself some granola and count your blessings.)

I am talking about winter. By default, this means I am also talking about snow.

There is absolutely no use complaining about it. It’ll be happening until mid-April, as it does every year. The only thing you can do is this: reward yourself, or someone else, for shovelling. Because this appears to be a winter with one heck of a lot of shovelling to do. And for whatever reason (maybe you were sick or out of town), your roommate did most of it, or maybe your landlord or your neighbour. The point is, shovelling is a pain, and if you want said roommate/landlord/neighbour to keep up the good work, a little love couldn’t hurt.

Or just shovel yourself and make this cake anyway because it’s easy, quick, and delicious.

Thank you for shovelling cake:


  • 3/4 cup applesauce
  • 1/3 cup sunflower oil (or melted unsalted butter)
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tablespoon vanilla extract
  • 2 tsps powdered ginger
  • 1/2 tsp cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cup of flour
  • 1/4 cup old-fashioned oats
  • 1/2 cup frozen raspberries

1. Preheat the oven to 350°F.

2. In the largest bowl you’ve got, mix the oil into the applesauce. Mix in the sugar, eggs, vanilla, then the spices. Sprinkle the baking soda, salt, and oats over the mixture and mix in. Add the flour last, mix until just combined. Fold in the raspberries. Pour mixture into a greased loaf pan.

3. Bake for 45-55 minutes, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.

    How about I just shovel some of that cake directly into my gaping, drooling maw? Mmmm.

      Yes, but in that case, you’ll have to teach the pup how to bake.

      Haha, it would hypothetically be 18 cakes, except I’ll have to deduct about 16 or so for the years that I was helping out.
